Hawaiian Haystacks

Since we’re all going to be home a lot more, I thought I would share more #koodekereats recipes. I hope you don’t mind!

One of our favorite dishes is Hawaiian Haystacks, disclaimer, this is not fancy. It’s comfort food and reminds me of my childhood. My husband grew up in California and had never heard of it until he met me. I grew up here in Utah, so maybe it’s a Utah thing I don’t know. Anyhow, this version is a lot healthier without the traditional cream of chicken. 

 

 

INGREDIENTS:

One rotisserie chicken, shredded
Broth:
(2) 32 oz. cartons of chicken broth
5 bouillon chicken cubes (I like to use Knorr, but I don’t think they sell it in the US. My friend brings it back for me from Switzerland.)
Salt + pepper to taste

 

DIRECTIONS: 
In a separate bowl, add 2-3 Tbs. cornstarch with a bit of water. Which to make a paste. Then slowly add into the broth mixture to thicken.

Use white rice and add toppings. Here are a few of our favorites: Peas, onions, pineapple, red pepper, green onion, shredded cheese. S&P to taste. Enjoy!
