I shared this salad on instagram stories the other day and had a lot of requests for the recipe. I love this salad and if you add a little protein (grilled chicken) it's a meal on its own. I will say its best if you have ripe pears, I know it's not the season for the best produce but I was craving this salad.
1 head or bag of butter lettuce
2 pears slice
One shallot sliced and sautéed in olive oil
Handful of sliced dates (trader joes has great Moroccan Dates)
Marcona Almonds (I love the rosemary Marcona Almonds from trader joes)
Shaved Manchego cheese
1/4 C Olive Oil
1/4 C Rice vinegar or white wine vinegar
Juice of half a lemon
1 garlic minced
S & P to taste
1 tsp of dijon mustard
Whisk all ingredients together.
