GREEK PLATTER

A while back I had friend that was ill and I had offered to take dinner to her. I wanted to make something healthy, easy to transport and still be delicious served at room temperate. This Greek Platter is not only pretty but so easy to make. 

For this dish I make everything on the grill. First up you'll need to marinate your chicken tenders in a ziploc bag. 

Marinade:

1 package of chicken tenders
1 tablespoons extra virgin olive oil
Juice from 1 medium lemon
6 garlic cloves, minced
1 teaspoon cumin
1 teaspoon smoked paprika
¼ teaspoon curry powder
1/8 teaspoon cinnamon
Pinch red pepper flakes
1 teaspoon kosher salt
Freshly ground black pepper

Combine all ingredients in a bowl, mix and pour into a ziploc bag with the chicken. I like to marinate for at least a few hours. Overnight is best. Cook the chicken, red  bell peppers, and red onion on the grill. No need to put olive oil on the peppers or red onion since you want them charred. Just put them directly onto the grill.  

Platter:

Warm Pita Bread ( you can heat up on a stove top). Lettuce, grape tomatoes, cucumbers, grilled onions and grilled red peppers. The Trader Joes Greek Tzatziki Sauve is great, If I have more time I'll make it from scratch. All you need is greek yogurt, shredded and strained cucumber, lemon, crushed garlic and S&P. A side of greek olives are a welcome addition as well.
