Summer Salad

With summer dinner parties in full swing this salad is the perfect choice for a side. Sweet summer melons, fresh cherry tomatoes and burrata cheese are combined to create a refreshing summer salad that’s pretty and so SO delicious. Top this quick and simple salad with a drizzle of dressing and crispy prosciutto. Every bite bursts in your mouth with juicy melon accompanied by sweet tomatoes. The cheese adds creaminess, and that crispy prosciutto adds a nice crunch. A perfect combo for summer. Heres how to make it….
Start with the prosciutto. Bake on a sheet at 400 degrees for 8 minutes. 
Then chop the melon into bite sized pieces and slice the cherry tomatoes in half.
Add the melon, tomatoes, burrata cheese and crispy prosciutto onto the arugula then make the dressing.
Dressing recipe:
In a bowl add olive oil, lemon juice, salt and pepper, dash of red pepper flakes and a drizzle of honey. Mix vigorously and drizzle on top right before serving.
